Stocking my first kitchen


Things I want to buy for my first kitchen.

1. Cast Iron Skillets - The best investment for any kitchen is a cast iron skillet. It lasts a lifetime and if used properly is the only skillet one will ever need. From crispy hash potatoes to the best pan pizzas, a lot of good dishes can be made on this.
  • It cooks evenly. If pre-heated properly the high volumetric heat capacity of cast iron does its magic. So once hot, it stays hot.
  • It doesnt give you cancer unlike calphalon pans or any other type of chemically sprayed pans. The reason the chemical film comes off each time we cook is because part of it goes into the food and part comes off while cleaning. So we are ingesting harmful chemicals each time food is cooked on those pans.
  • Don't use soap, instead scrub the pan immediately after use with little water.

2. Carbon Steel Knife - If one takes their cooking seriously, and is ready to invest some time and a lot of care (willing to sharpen your own knives), then carbon steel is where it's at. It pays off in dividends.

If you just want to get dinner on the table, not think about your knives beyond whether they're just barely sharp enough to blunder their way through an onion, and not worry if you mistreat them to no end, then yeah, stick with stainless.

3. Cutting Board - Another kitchen essential.

  •  Buy two. One for fruits and vegetables. The other for meat.
